Do you ever wonder how they make those fancy wedding cakes? How they crimp and curl all that fondant into perfect ruffles and flowers? We stopped by for a visit with Iris Smith, owner of Cakes by Iris, this week and she let us photograph and video her making a wedding cake from start to finish. We love Iris, she’s so talented and such a good sport – what a treat! I had no idea what to expect, was it going to be tense and fast paced like on TV or laid back and easy. Surprisingly, it was very calm and stress free – don’t get me wrong, it was busy, VERY busy! And the heavenly smells… I wasn’t ready for that, I should have eaten lunch before hand.
Iris was making a fabulous four tier white wedding cake with fondant ruffles on the bottom layer. She makes it look so easy, it would take me four days to do that much work. We checked in with her at the Red Barn on wedding day to take a peek at the finished product and watch her assemble the masterpiece. It looks fabulous!
